Guérande's sea salt is one of the finest harvested in the world, and consequently is used by great chefs such as Paul Bocuse. Awarded the national "site remarquable du gout" in 1996, Guérande's salt marshes represent an undeniable contribution to the area's heritage and economy in terms of agriculture, culture, and gastronomy. Sea salt is still produced in the salt marshes around Guérande in the same way today as it was a thousand years ago, i.e. hand-harvested, using wooden tools. Sea-water is allowed through the dyke at high tide and flows through a network of pools. Salt workers are able to draw off water from the reservoir and direct it along ditches. Then the process of evaporation begins thanks to the drying action of wind and sun. The brine gradually becomes more and more concentrated until it arrives into the last salt pan, called the "oeillet" where salt crystals start to form. The the paludier are able to harvest the "coarse grey salt" at the bottom of the pan, and the finer, delicate "fleur de sel" at the surface of the pan. Two types of sea salt are produced: - The grey salt which is collected daily from the bottom of the pools. It is "moist" and unrefined. It remains a light grey colour, because of the clay from the salt flats where it is collected. It is used in cooking, including the locally renowned meat and fish cooked in "croûte de sel"- salt crust. Unwashed, unrefined and additive-free, it adds flavour to traditional family cooking. - The finer "fleur de sel", is skimmed from the surface of the salt ponds. It enhances the subtle flavours bringing out the taste of even the finest dishes. Vers l'an 1500, les marais atteignaient 80 % de la surface actuelle. Entre 1560 et 1660, grâce au développement du commerce maritime, 2500 œillets seront construits. Les dernières salines ont été construites vers 1800. Mais un abandon progressif commence dès le milieu du 19e siècle face à la concurrence du sel de mine, à la baisse de consommation du sel alimentaire comme produit de conservation et à l'amélioration des transports par voie terrestre.

Bake in oven for 1 hour at 220℃. Put 100 g fresh cream and a pinch of sea salt. Mix well with blender. I used Japanese variety “AJIHEI” squash this time. http://www.cabosfinest.com The Perfect Margarita. The world famous Margarita has an illustrious and disputed history dating back to the late 1930’s during the dreaded Prohibition. Cocktail historians claim is was merely the cocktail called ‘daisy’ that was made with orange liqueur, lime juice and Brandy. When brandy became scarce certain hero’s were known to drop below the border in search of a perfect stiff Daisy that had tequila replacing the hard to acquire brandy. Also claiming the invention was Carlos "Danny" Herrera at his Tijuana restaurant Rancho La Gloria in 1938 where he created for customer and former Ziegfeld dancer Marjorie King, who was allergic to many spirits, but not to tequila Another legend claims that the original Margarita was made in 1941 at Cantina Hussong in Ensenada by bartender Don Carlos Orozco. While he devised this most excellent concoction he had the visiting Ambassador of Germany’s daughter Margarita Henkel give it sip. The overwhelming conclusion. ‘ most excellent!’ Others say the inventor was Dallas socialite Margarita Sames, when she concocted the drink for her guests at her Acapulco vacation home in 1948. However, Jose Cuervo was already running ad campaigns for the margarita three years earlier with the slogan, "Margarita: It's more than a girl's name. In any event we are delighted to know and love this most excellent elixir, this sayer of desert truths and the gods gift from the sacred blue agave. Let us now watch as we make the perfect stiff Margarita. First step take Jose Cuervo mix and violently shake it for 5 minutes, then toss it in the trash along with that bottle of Cuervo Gold. We are striving for the classic style Margarita not a mango marg nor a frozen strawberry variety. Step two- Use a decent Reposado Tequila that is 100% blue agave. Today we are using Don Julio Reposado and we make them fuerte or strong in order to enjoy the delicious taste of this fine tequila. Typically two ounces to one Cointreau mixed together in a metal shaker. Fill the shaker with high quality ice then the tequila and Cointreau. Step Three-Squeeze fresh lime approximately one ounce and add to the mix. Note-Never use lime juice from a bottle, ever, nunca, nada like never! And please do not pretend that a pre-made mix is a Margarita. Step Four- Take pre-chilled glasses of choice out of the freezer use the lime to wet half the glass and salt it lightly on the OUTSIDE of the rim. You don’t want too much salt effecting the blend. A quality sea salt is preferred. Add ice to the glasses. Step Five- shake the mix in the shaker for 15 seconds of until bottom of shaker ices up. Strain mix into ice filled glasses and add your slice of lime. Final Step- Enjoy it with a friend or lover while watching the sun set over the ocean. But remember that a well made margarita can be enjoyed any place and at any time of day or night with others or drink it alone since there will be no one there to observe your improved behavior

According to legend, many lonely, desperate men have been lured by the beauty of a woman with the bottom half of a fish, dragged down to the depths below where they faced unknown horrors. The ancient Greeks called them sirens, the Japanese call them ningyo, but we call them mermaids. These are 5 mermaids caught on camera and spotted in real life. Let’s begin! 5.) Mermaid Migration Caught on Film by Drone https://www.youtube.com/watch?v=r1NkMQ8FGec All mammals travel in packs, and if mermaids are merely an offshoot of humans, as aquatic ape proponents suggest, then it would make sense that they would travel in pods like whales or dolphins. This footage allegedly captures one such pod traveling through the ocean. Very little information exists about the video, which was uploaded anonymously and then shared by several different channels for different purposes. There have been reports in the past of groups of mermaids, though never caught on film. Some purport this is simply a pod of dolphins, though without more information to definitively put the argument to rest. immediately be recognizable as such? 4.) Fisherman caught a shark, which is considered a delicacy in the region, and when they opened the shark up to begin processing it, they find this strange, almost humanoid protrusion within. While the video is no longer available, some have argued that the image is a hoax. It’s impossible to know for sure until the fisherman who captured this shark steps forward. 3.) Mermaid skeletons have been discovered before and presented for display, though this may be the first and only mermaid skeleton displayed in such a prestigious, national museum. One of the most famous examples of mermaid remains is the Fiji Mermaid, a purported hoax allegedly created by taxidermying the remains of a fish and a monkey. 2.) While it’s a short video, the quality of the video is high enough that we can clearly see the creature’s humanoid torso and it’s long, fishlike tail. Some have argued that this video is a hoax created with computers, though there are certainly more obvious doctored videos that most people believe. 1.) Real Mermaids on Coast of California https://www.youtube.com/watch?v=tQKoHuWo0Z4 This video recorded in California allegedly captures a mermaid doing what mermaids are known to do, just hanging out. While the video resolution is a bit fuzzy, you can clearly make out the creature in the video. When the video begins, it’s sitting on a beach, casually waving its tail, perhaps resting after a long journey or just enjoying the rays of the sun. The creature then dives into the water. After diving, it then breaches the water, and you can clearly see its humanoid torso and head. This mermaid does not share the typical human appearance that most mermaids are reported as having. It’s body seems to be a greyish color, and its head lacks hair, reflecting a possible more fish-like quality than the romantic image that people often think of when they think of mermaids. Artisan® Pacific Blue® Kosher Flake Salt For the Salted Caramel: 1 c. granulated sugar ½ c. water 6 T. unsalted butter, cubed, at room temperature ½ c. heavy cream ¼ t. Pacific Blue Kosher Flake Salt For the Ganache: 8 oz. semisweet or bittersweet chocolate, coarsely chopped 1 c. heavy cream Artisan® Bali Pyramid Sea Salt, to taste Powdered sugar, to taste To make the crust: Preheat oven to 350° Crush a package of regular (not double stuff) Oreos as we do in the video with a rolling pin or go modern and whirl them in a food processor. In a medium bowl combine crushed cookies, melted butter and Pacific Blue Kosher Flake. Pour into a 9-inch tart pan or pie plate and press firmly and evenly into the bottom and sides. Bake for 10 minutes and let cool completely. To make the salted caramel: Spread the sugar into a wide saucepan and pour over the water. Heat over medium heat, swirling the pan just enough to moisten the sugar. Try to avoid any direct stirring of the pan, swirl it if you notice there are some remaining dry spots as it heats. Continue to cook until the sugar starts to darken. Keep an eye on it at this point because it can burn quickly toward the end. When the caramel is a deep amber color it will begin to smoke. Remove it from the heat and add the butter, stirring with a whisk until completely melted, then gradually whisk in the cream stirring until sauce is smooth. Sprinkle in Pacific Blue Sea Salt. Allow salted caramel to cool for about 10 minutes, then pour it over the crust and place in the freezer to set for 30-45 minutes. To make the chocolate ganache: Place chocolate in a medium bowl. Bring cream just to a boil over medium-high heat. Pour over chocolate. Let stand for 5 minutes then stir with a whisk until smooth and shiny. Allow ganache to cool about 10 minutes then pour a layer over the salted caramel. Return pie to the freezer to set the ganache layer. Sprinkle generously with Artisan® Bali Pyramid Salt and powdered sugar if desired. Serve slightly cool or at room temperature. Store in the refrigerator. Put this on your table and listen for the collective intake of breath as your friends and family line up to taste the magic.

This chocolate salted caramel tart is absolutely amazing. A buttery almond crust, gooey salted caramel and bittersweet chocolate ganache, all garnished with salted crystals. Chocolaty, rich and buttery, a perfect treat for any occasion. Ingredients: Makes about 6-8 servings Almond Chocolate Sweet Pastry 1 1/4 cups (160g) flour 1/4 cup (30g) ground almonds 1/4 cup (30g) unsweetened cocoa powder 1/4 cup (50g) sugar 1/4 tsp salt 1 stick (110 g) cold unsalted butter, cut into small (1/2-inch) cubes 1 tsp vanilla extract 1 egg 1-2 tbsp ice water Caramel 1 1/2 cups (300 g) sugar 1/2 cup (100g) water 1/2 cup (120 g) heavy cream 5 tbsp (70 g) unsalted butter 1 tsp salt Chocolate Ganache 1/2 cup (120 g) heavy cream 4 oz (120g) bittersweet chocolate, chopped Garnish sea salt crystals Directions 1. Prepare the sweet pastry. In a large bowl mix flour with ground almonds, cocoa powder, sugar and salt. 2. Incorporate butter to the flour mixture, using a pastry blender, a fork or a pastry processor, until crumbs are formed. Add the egg and vanilla extract and mix them in. Add water and incorporate into the dough. Wrap it with plastic, knead slowly to form a disc and refrigerate for at least 30 minutes or overnight. 3. On o floured surface or over the plastic wrap roll the dough to a circle with about 1 1/2 inches larger than your tart pan. Lift up the rolled dough and place it on a greased 9 inch tart pan. Remove the edges and refrigerate for 30 minutes before baking. 4. Prick the dough with a fork, line a parchment paper over the dough. Fill with dry beans, rice or pie weights. 5. Bake for 15 minutes in preheated 350 F (180C) oven. Remove the weights and the parchment paper. Return to oven for another 10 to 15 minutes. Allow to cool before removing from the tart pan. 6. Prepare the caramel. Place the sugar and water in a medium heavy bottomed saucepan over medium-high heat, and cook without stirring until sugar dissolves and gets a caramel color. 7. Remove the pan from the heat and add the cream. It will bubble a little bit. 8. Cook for about 1 or 2 minutes stirring constantly with a wooden spoon until smooth. Remove from heat and add butter and salt. Stir well until smooth. 9. Let the caramel cool slightly and pour over the chocolate crust. Refrigerate for about 4-5 hours. 10. Prepare the chocolate ganache. Heat the cream in a small saucepan. When the cream just begins to boil at the edges, remove from heat and pour over the chopped chocolate. Let sit one minute, then stir until smooth. 11. Pour the chocolate ganache over the caramel. Spread it evenly and refrigerate for another 2-3 hours before serving. Sprinkle with sea salt flakes and serve. Look no further! I introduce you to The Detox Dudes Salt-Water Flush. Warning: Make sure you have two hours devoted to toilet-time after starting the flush. Do not do while visiting someone else's home, if you have any house guests that you are trying to impress, or if in the early stages of a new relationship. The rancid odors can be traumatizing and may ruin your reputation with others, especially if this is your first salt-flush. A salt-water flush is an ancient yogic healing modality that does an incredible job at flushing the small and large intestines, balancing electrolytes, remineralizing the body, and restarting digestion. In my opinion, it is one of the best ways of re-booting your system when you are in a funk, or cleansing your energetic body when feeling heavy. What you’ll need: 2 glass jars or glass bottles (24-32oz) 1.5-2.5 heaping tbsp of sea salt (Icelandic or Celtic is best) Natural spring, filtered, or distilled water Apple Cider Vinegar and/or lemon juice How to do it: In the morning on an empty stomach, put 1.5-2.5 heaping tablespoons of sea salt in one glass jar/bottle. I like using sea salt vs. pink himalayan salt because the ocean contains very similar mineral ratios to that of our blood plasma. Furthermore, many of the himalayan pinks salts are not truly from the Himalayas and are not sustainably sourced. If this is your first flush start on the lower dose and work your way higher. If no flush is achieved, then you know you need more salt next time. Then you’ll put in 2tbsp of apple cider vinegar, followed by 4oz of boiling water. Mix with a spoon (please not plastic) until the salt has dissolved. Then follow with 16-20oz of distilled, spring, or filtered water. Mix well and you’ll want the brine solution to be warm, but not hot. Fill up the other jar/bottle with 32oz of clean water. Now, slowly, over the course of 20-30 minutes you will take a few sips from the brine solution and a few sips from your freshwater. Keep doing so until you finish both bottles. If you drink the solution too quickly, you will vomit. And it’s a very unpleasant projectile type vomiting, and it hurts. It will also hurt your ego and make you feel stupid. After you finish both bottles, you may go somewhere to rest. You can lay down, or just sit in a comfortable chair/couch and do your best to relax. Within 20 minutes to one hour, you will experience some gurgle guts followed by projectile hershey squirts. Anywhere between 3-10 bowel movements in the next couple hours is totally normal. For most people who have never done this, the bowel movements will be dark black, have a rancid odor, and sludgy. Because most people’s small intestines have never been cleansed or flushed (colonics and enemas can’t make it up that far), the odors can be really intense. Like I said, you do not want to be dealing with house-guests during this adventure. Also, if you don’t clean the toilet properly when finished, the next person who uses the bathroom is going to think that you have been violently ill with malaria for the past few days. But do yourself a favor and don’t clean the toilet until bowel movement #3 or #4, otherwise you are just wasting your time. Also, extreme thirst after the flush is also normal, and I suggest having at least another 32 oz of water available to you after you finish the initial two bottles of liquid. Don’t eat solid food for about an hour after the flush, and make sure to take probiotics later that day. Too many salt-flushes can really mess your flora up, which is why I suggest 3-4 per month maximum for most people. This is excellent for constipation, digestive issues, chronic fatigue, depression, and anxiety!! And just overall somber moods. Funkbuster recipe: Salt-water flush followed by cold-water shower is an amazing way to get yourself out of even the toughest funks.
