If you are ONLY eating one a day with your other meals, you have options. 1. Cut the recipe in half, or 2. Put 4 meals in the freezer and 3 meals in the fridge. 3. Take one out the night before and keep in the fridge to thaw. 4. Store the yogurt sauce in the fridge and add on after you've reheated. The best way to get the most out of your vegetables is to enjoy them a variety of ways -- raw, steamed, boiled, baked and grilled. Imagine you're an Argentinian gaucho out there on the range, looking for something to add flavor to your dinner of grilled beef. You find some cilantro growing over here, maybe a little parsley over there, a little garlic, a little oil. Mix it all up and spoon it across that grilled flank steak stuffed with fresh veggies. Take a bite, lean back, and bid an early "Buenos Dias" to grilling season! | Ingredients | Lean flank steak, 1.5 lbs. Carrot, sliced, 2 Red bell pepper, sliced, 1 Black pepper | Marinade | Garlic cloves, 4 Olive oil, 1/4 cup Bragg Liquid Aminos (or coconut aminos), 1/4 cup Lemon juice, 2-3 tbsp Parsley, 1 bunch Cilantro, 1 bunch Sea salt Black pepper | Directions | Fire up the grill (or, if it's still too cold, heat oven to 375 degrees F). Slice the flank steak in half lengthwise to make two thinner steaks and pound with a tenderizing mallet (or closed fist, if you're into that kind of thing). Cut into 4-inch strips. Put the garlic cloves and olive oil in a blender and blend until smooth. Slowly add the leafy tops of the parsley and cilantro. Place one strip of steak on a plate, add slices of carrot and bell pepper, roll up the steak, and place it fold-down. Repeat until all steak has been used. (Use a toothpick to secure the rolls if needed.) Place the rolled steak on the heated grill, fold-side down. Turn once, cooking to desired degree of doneness. If cooking in an oven, sear the steak rolls in a nonstick skillet for about 1 minute to seal, then place them on a baking sheet and bake for 15 minutes at 375 degrees F. Plate the steak and serve with chimichurri sauce. Today, we're cooking up one of the wild kings of freshwater protein: the almighty (and wonderfully fatty) salmon. But don't think the fish gets all the glory in this delicious recipe, which is really all about the pairing sauces. You'll have your choice between a smoky Sriracha or pineapple glaze to satisfy your spicy or sweet tooth. The good news? Whichever sauce you choose, you really can't go wrong! ========================================­===== | Ingredients | Wild-caught salmon 1 lb. Extra-virgin olive oil (or spray olive oil) 1 tbsp Pepper 1 pinch | Smoky Sriracha Glaze | Sugar-free maple syrup (or raw honey) 3 tbsp Smoked paprika 1 tbsp Sriracha 2 tbsp Tumeric (optional) 1 tsp | Pineapple Glaze | Bragg liquid aminos or low-sodium soy sauce 1/2 tbsp Fresh-diced pineapple 1/4 cup Low-sodium ketchup or no-salt tomato sauce 1-1/2 tbsp Sugar-free maple syrup or raw honey 3 tbsp Apple cider vinegar 1 tsp Garlic, minced 1/2 clove Fresh lemon To taste Black pepper 1 pinch | Directions | 1. Fire up the grill, or heat the oven to at least 350 degrees F. 2. Brush or spray the salmon with a little olive oil and a pinch or two of pepper. 3. In a small bowl, mix together the ingredients for the smoky Sriracha glaze. Season to taste, and then set it aside. 4. In food processor or blender, mix together the ingredients for the pineapple glaze. Season to taste with fresh lemon and more pepper. Set it aside. 5. Baste the salmon with either of the sauces, and place it on the grill (or in the oven on a baking sheet) for 5-7 minutes. Flip the salmon, baste it with the sauce again, and grill or bake it for another 5-7 minutes. 6. Repeat until the salmon is cooked to your desired readiness; just be careful not to overcook it. The more seeds you leave in, the spicier your guacamole will be. 7. Sprinkle in half the cotija crumble and gently fold into avocado mixture. 8. Top guacamole with corn, remaining cheese, mayo, and pico. Garnish with chopped onion, cilantro, and a sprinkle of cracked pepper. 9.
