You cannot get fresher ice cream than this - Thailand / Bangkok style hand rolled ice cream!!! (aka "Fried Ice Cream Rolls"). Throughout the hot summer months they've been serving up some of the most delicious ice creams in town and at festivals, prepared in front of you almost instantaneously. The following were the flavours available on the day of our visit, (but do look out for their specials): * "Naughtily Nutty" (created using Reese's Cups Peanut Butter). * "Cheeky Lil Monkey" (Banana and Nutella). * "Say Cheese" (Cheesecake, Strawberries and Digestive Biscuit). * "Kinky Kinder" (Ferrero Rocher, Kinder Bueno and Salted Caramel). * "You Know You Want It" (Oreo, Nutella and Flake). * "A few of your 5 a day" (Fresh Strawberry and Banana). * Once the freshly made ice cream has been created it's topped with a generous squirt of caramel or chocolate sauces. After a trip to Bangkok in Thailand entrepreneur Henry and his business partner Rob were inspired and felt that Londoners needed a taste of this type of fresh ice cream - so within a few months of returning to London he started experimenting with various flavour combinations and once happy, they set up the shop. This style of freshly made ice cream is very similar to Gelato ice cream because it has a dense, milky texture that's less creamy than the "fat heavy" American-style ice creams. Mrs Crocombe is making one of Lord Braybrooke's favourite desserts - trifle. It's the perfect treat to follow any meal. INGREDIENTS 100g leftover sponge cake 100g ratafia biscuits or macaroons 50 ml brandy 125ml port or sherry 1 teacup of jam 100g crystallized fruit, such as ginger and cherries 500ml custard (you need to add either 2x sheets of gelatine or 2 tbsp of cornflour to it when you are making it so that it will set) 100g ground almonds 1 ¼ pints whipping cream 1tbsp caster sugar For the decoration: Slivered blanched almonds Small cubes of crystallised fruit Anything else you like (flowers are always nice - but be careful to choose edible varieties as some varieties of flowers can be dangerous to eat) METHOD Cut your sponge cake into slices. This recipe is excellent for using up leftover sponge cake. You may prefer to use a fatless sponge as it is slightly lighter. Layer these into a deep glass dish, and pour over the brandy. Spread your jam on top – you can use whatever flavor you like. Chop your fruit and add this in an even layer on top. Now add your macaroons or ratifia biscuits, and over this pour your port or sherry. Leave this to soak for 10-15 minutes. If you haven’t any custard to hand, this is the time to make it. The custard needs to set, so if it’s not got gelatin in, reheat and add 2 sheets (soaked first), or whisk up cornflour in a little milk, and add it to the hot custard. Add your ground almonds and allow to cool to room temperature then spread over your trifle evenly. Whip the cream into soft peaks for piping and add some sugar. Pipe this onto your custard, building up layers of cream. Decorate your trifle using almonds, crystallised fruit and edible flowers. Get more details here: http://www.eatingthaifood.com/2015/02/how-to-make-thai-sticky-rice/ In Thailand, sticky rice, known as khao neow (ข้าวเหนียว) is the staple in the northern and northeastern regions of the country. Many Thais that originate from sticky rice regions, eat sticky rice multiple times a day, for breakfast, lunch, dinner, and even snack. For this sticky rice recipe, I’m going to be making it the same way they make it in Isaan and other parts of Thailand, and I’m going to be cooking it right on my Thai street food cart. Sticky rice is often eaten with salads and grilled meats, dishes like som tam (green papaya salad), laab (minced meat salad), and all sorts of grilled meats and fish. Along the streets of Thailand, nearly everywhere you look in Bangkok, you’ll find food vendors grilling up skewers of pork called moo ping, and they always (unless they run out) also have sticky rice. The combination is one of the ultimate snacks combinations of Thailand. In parts of Thailand where sticky rice is the staple, it’s typically cooked in the morning for the entire household, and then transferred to what is called a kratib khao neow (กระติ๊บข้าวเหนียว), a basket that is specifically made to hold sticky rice - it’s just a cylinder bamboo basket with a lid, and it keeps the sticky rice moist without getting crusty throughout the day. When meal times roll around, all participating eaters grab a handful portion of sticky rice and proceed by taking a ball of sticky rice about the size of an olive, dipping it into the dressing of one of the side dishes at the table, and consuming. How to make sticky rice: It takes a little time and some thinking ahead to make sticky rice, because just like cooking beans, you have to soak the rice before you cook it. It’s best to actually soak your sticky rice overnight, and then cook it the next day, but if you don’t have that amount of time, of if you wake up one morning and all of a sudden decide you want to cook sticky rice, you should soak it for at least four to five hours. All you have to do is put the raw sticky rice is a bowl or tub, and submerge it in room temperature water, and allow it to sit. You don’t even need to rinse the rice, just let it sit and soak. After the rice has been soaked, it will become a little swollen and much softer, so that it won’t take too long to steam. After soaking the rice, I then transferred it to a cone shaped basket used for steaming. The rice then needs to steam in a pot with a few inches of water at the bottom for 15 to 20 minutes, but usually it just takes 15 minutes for me - that is if I soak the rice overnight. If you soak the rice for less time, it may take a little longer to steam. To steam, make sure the rice is elevated above the boiling water, then cover it somehow so the steam remains within the rice. After 15 minutes you can remove the lid, and check to see if the rice is fluffy and not crunchy at all. If it’s still a little crunchy, just put the lid back on the basket, or whatever steamer you’re using, and allow to steam for a few more minutes. For this Thai sticky rice recipe I used one kilo of raw rice, but you can really use however much you want, and the exact same directs and steps will still apply. If you soak your sticky rice overnight, then follow this recipe, you’ll have beautiful, hot and fluffy sticky rice every time… and it tastes amazing! Extreme Chinese Street Food - JACUZZI CHICKEN and Market Tour in Kunming! | Yunnan, China Day 4

I paid for this tour, but they did a great job and I would recommend them. Kunming, Yunnan, China - Kunming is the capital and largest city in Yunnan province China. So I was excited to explore the local market in Kunming and eat as much street food as possible! Here are all the Chinese street food dishes we ate throughout the market: Rice pudding - 5 RMB ($0.76) - This was slightly fermented, and sweet, like a rice alcohol pudding. It was pretty good, but quite sweet, so I couldn’t eat that much of it. Dumpling - 1 RMB ($0.15) - I saw these dumplings sizzling and hissing and there was no way I could walk by without trying one. Stuffed inside were leek and egg. They were a little on the oily side, but delicious. Whole duck - 20 RMB ($3.03) - Yunnan is famous for roast duck, and there’s a version that’s comparable even to Beijing style. Style I was excited to find a stall that at the market that specialize in Yunnanese roast duck. It was delicious and the owners were very friendly as well. Pickled pears - 5 RMB ($0.76) - This was an interesting snack, and supposed to be very healthy and good for digestion. Drink - 2 RMB ($0.30) - This drink was incredible sweet, but refreshing. Tofu Noodles - 5.5 RMB ($0.83) - Another extremely popular Chinese street food snack at the market was tofu noodles - I’ve had tofu and noodles, but not really mixed before. It was a little plain and starchy, but from all the sauces, it was taty. Rice balls - 5 RMB ($0.76) - We also tried sesame rice balls which were delicious. Jacuzzi braised ½ chicken - 15 RMB ($2.27) - This was one of the highlights of the market for me, mainly because the owner was so friendly and his giant jacuzzi of boiling chickens was amazing to see! The chicken was a little bony, but flavorful. Yellow soybean porridge - 3.5 RMB ($0.53) - As we were leaving the market, we stopped for one last bowl of soybean porridge to eat with youtiau, Chinese donuts. I wasn’t expecting to like it as much as I did, but it was delicious. It was very warming and hearty. Finally to complete this Chinese street food tour in Kunming, Jerry and I, along with his family ate Chinese Yunnanese bbq. It was tasty and a great way to end this amazing day of street food. Peel the potatoes and cut into 4. Place in a medium pot and cover with cold water. Set over high heat, add a teaspoon of salt, cover and bring to a boil. cook until tender. 2. While the potatoes are cooking, heat olive oil in a pan over medium heat. Add the onion and sauté 2-3 minutes, add crushed garlic and chopped carrots, sauté until the carrots are tender, about 5-7 minutes. 3. Add the ground lamb, Cook until no longer pink, about 5 minutes. Season with salt, pepper, chopped rosemary and thyme. Add tomato paste, flour and stir. 4. Add beef broth and frozen peas. Bring to a simmer, reduce heat to low and cook, stirring occasionally, until sauce thickens. 5. When the potatoes are done cooking transfer them to a bowl. Add butter, milk, egg yolk, salt and pepper. mash the potatoes until smooth. 6. Preheat oven to 400F (200C). 7. Layer the meat mixture in a 13"X8.5" (33X22cm) ovenproof dish. Spread the puree over the meat mixture. 8. Bake 20-25 minutes. or until mashed potato is golden brown.
