Scottish Whisky (Scotch) is, for now, robustly protected by Scotland's membership of the EU, which offers strict legal and international trade safeguards on intellectual property and status of this prestigious global brand. The Scottish Whisky industry supports 20,000 jobs in Scotland and 40,000 in the UK. It is a £4 Billion industry that accounts for over 20% of all UK food and drink exports. After March 2019 EU protections on Scottish Whisky end. So far, UK Trade talks with the US have included talk of relaxing the definition of 'whisky'. There have been disputed claims from the UK and Peruvian trade talks that demanded whisky production take place in Peru. President Trump, never one to pass up a lucrative business opportunity, is already eyeing the UK's post-Brexit NHS and Food market so why should Scotch be any different? With a weak and chaotic Tory UK Govt desperate for trade deals, nothing can be said to be off the table. Meanwhile, the Scottish Government has been blocked from all trade talks and its calls for stronger legal protections for Scottish Whisky have been ignored. Will multinational drinks companies still maintain levels of whisky production in Scotland if the protections are weakened and cheaper production can be done elsewhere? How will tariffs affect that decision? How will external production affect independent whisky makers and competition? What is the 'independent' Scottish Whisky Association's take? Former Chief Executive David Frost was in favour of remaining in the EU but has since left for a new role as foreign affairs special adviser to UK Foreign Secretary, Boris Johnson MP. New Chief Karen Betts, formerly of Cabinet Office, Joint Intelligence Committee and Ambassador, is now talking up the opportunities of Brexit for Scottish Whisky. The SWA’s various positions seem to mirror, rather uncannily, the very same as the UK Govt. What will be the impact on the Scottish economy, jobs, culture and identity? A cynic might say that the UK Govt was preparing to trade off protections to the advantage of other sectors such as finance and that damaging Scotland economically and culturally would be the icing on the cake for right-wing Tories. What we believe is that Scotland's huge wealth of resources and relationship with the EU are best managed and decided by itself. Thereafter, whisky begins to circulate throughout the country and by 1644 it was now. Of course, there are some smart distillers who sold it illegally and it became only more popular after that. By 1780, there were only eight legal distilleries in Scotland who had to compete against bootlegging operations. The popularity of whisky swelled again in 1831 when a column still took off. Now distilleries were able to mass produce this spirit at a much lower cost with a better quality, however, it was until 1880 that Scotch would become a global phenomenon. Up until then, wine and brandy had the top spots of drinks in the world. Interestingly, a very small microscopic insect killed a lot of the grapes and so there was a huge demand for a new beverage. The phylloxera bug brought the wine and brandy production almost to an immediate halt and scotch would pick up where they left off. Today, scotch is enjoyed by many gentlemen around the world. Unfortunately, the terms are often mixed up and so we'll try to provide some clarity. Probably the most popular scotch term is single malt. That means, it is a whisky from a single Scottish distillery that is based on barley and water. It contains no other cereals, must be distilled and bottled in Scotland. Next up is a category of single grain Scotch whisky which usually you can't find easily on liquor store shelves in the US. Just like the single malt, the single grain whisky starts out with barley and water but then other things are added to the mash which would start the fermentation and eventually end up in alcohol. Just like a single malt, it has to be bottled in Scotland to be named scotch. So single grain Scotch whisky is what you find for the most part in blended whiskeys out there. So what does the term blended Scotch mean? Basically, you need at least one single malt scotch that is then paired with at least one single grain Scotch. You may have come across the term blended malt scotch which is rather uncommon and previously was also referred to as “vatted malt” or a “pure malt”. If you get a blended malt Scotch you take at least two single malt scotches from different distilleries and blend them together. So blended grain Scotch is very similar it just means that you have at least two or more single grain Scotch instead of them blended together. So what needs to be in a Scotch in order to be able to call it Scotch? Again, it must be produced, bottled, and distilled in Scotland. Must be based on barley and water and must be aged in casks. Yes whole grains and other cereal can be added to the malted barley mash in order to produce different flavor varieties. It also has to be processed entirely at a distillery, it has to be fermented with enzymes and yeast, and the alcoholic strength can't be more than 94.8% or 190 proof. That is matured in a warehouse in Scotland and it can't be larger than 700 litres that's about 185 US gallons. In order to call it scotch, it has to stay there for at least three full years. If you call it scotch you must retain color aroma and flavor of the raw ingredients. It must not contain any other substances other than water to wear it down to bring to a certain proof level and e-150a which is caramel coloring. Bartenders don't like scotch whisky, at least according to a poll from Drinks International. Why do you think that might be?! Hamish Smith, editor of the Brands Report, said: ‘Our poll indicates that bartenders aren’t in love Scotch brands in the way they are with brands from other categories.’ Scotch has never had an easy relationship with cocktails. When the modern cocktail movement arrived, bartenders defaulted to classic recipes as the blueprint, which meant gin, rum, brandy and American whiskey. It took Scotch producers decades to react to this new opportunity – preferring, in many cases, to stick to the slightly pompous teaching that Scotch was too fine and precious to be mixed. The seemingly relentless drive to make age statement Scotch a luxury item, while passing off NAS malts or blends as “more mixable” is old thinking. The modern cocktail movement, like the elite chef world, doesn't compromise on ingredients or flavour. Drinks International surveyed 127 high-end bars from 38 countries around the world, with a high number of respondents from the US, England, Australia and Singapore. Smith said: 'If this report is anything it is a snapshot of the behaviours at the elite end of the bar business – not definitive, not absolute, but insightful nonetheless’.

Scotch whisky is malt whisky or grain whisky made in Scotland. Scotch whisky must be made in a manner specified by law. All Scotch whisky was originally made from malted barley. Commercial distilleries began introducing whisky made from wheat and rye in the late 18th century. Scotch whisky is divided into five distinct categories: single malt Scotch whisky, single grain Scotch whisky, blended malt Scotch whisky (formerly called "vatted malt" or "pure malt"), blended grain Scotch whisky, and blended Scotch whisky. All Scotch whisky must be aged in oak barrels for at least three years. Any age statement on a bottle of Scotch whisky, expressed in numerical form, must reflect the age of the youngest whisky used to produce that product. A whisky with an age statement is known as guaranteed-age whisky. A whisky without an age statement is known as a no age statement (NAS) whisky, the only guarantee being that all whisky contained in that bottle is at least three years old. The first written mention of Scotch whisky is in the Exchequer Rolls of Scotland, 1495. A friar named John Cor was the distiller at Lindores Abbey in the Kingdom of Fife. Many Scotch whisky drinkers will refer to a unit for drinking as a dram Single grain The majority of grain whisky produced in Scotland goes to make blended Scotch whisky. The average blended whisky is 60%–85% grain whisky. Some higher-quality grain whisky from a single distillery is bottled as single grain whisky. Blended malt Blended malt whisky—formerly called vatted malt or pure malt (terms that are now prohibited in the SWR 2009)—is one of the least common types of Scotch: a blend of single malts from more than one distillery (possibly with differing ages). Blended malts contain only malt whiskies—no grain whiskies—and are usually distinguished from other types of whisky by the absence of the word "single" before "malt" on the bottle, and the absence of a distillery name. The age of the vat is that of the youngest of the original ingredients. For example, a blended malt marked "8 years old" may include older whiskies, with the youngest constituent being eight years old. Johnnie Walker Green Label and Monkey Shoulder are examples of blended malt whisky. Starting from November 2011, no Scotch whisky could be labelled as a vatted malt or pure malt, the SWR requiring them to be labelled blended malt instead. Blended Blended Scotch whisky constitutes about 90% of the whisky produced in Scotland. Blended Scotch whiskies contain both malt whisky and grain whisky. Producers combine the various malts and grain whiskies to produce a consistent brand style. Notable blended Scotch whisky brands include Ballantine's, Bell's, Chivas Regal, Cutty Sark, Dewar's, J&B, Johnnie Walker, Teacher's Highland Cream, The Famous Grouse, and Whyte and Mackay. In 2013, Burn Stewart Distillery relaunched a long established blended Scotch brand: Black Bottle. They changed the bottle and they changed the contents. With a new mashbill the question is whether or not it is as good as the older version? Prior to 2013, Black Bottle was a wonderful blended Scotch with a tremendous amount of smooth, sweet Islay whiskies with some grain whiskies that were never offensive. A real treat that was super cheap to buy too! I mean typically around $23 or so. It and White Horse dominated the very best of blended Scotch whisky bargains. The new version tasting note is as follows: ABV 40% Age Statement None "Nose" (undiluted) Spirity, young for sure, but getting past that it exhibits notes of sea air, smoke, roses. Nothing special here nor did I expect an incredible nose given the cheap blend price. "Palate" (undiluted) Sherry for sure, hardly any Islay influence like peat and smoke.. I am tasting black grapes, black cherry, graphite, pencil lead and young oak. "Finish" (undiluted) Smokey, like a damp wood fire beachside, with much grainy notes, sandy, mineral water and herbs. General Impressions Big disappointment. This is a shadow of its predecessor. What was once a wonderfully smooth and peated blended Scotch with plenty of Islay notes of tar, seaweed and dulse is now a tired, boring and young whisky exhibiting dull black grapes, black cherry and little smoke. Recommendation Do not buy. This represents a cheap blended Scotch whisky experience that I do not care to repeat. If you ever see the old Black Bottle on a shelf, buy it! Single Malt whisky is one of the most revered spirits in the world. It is exclusively made from barley, which is quite a cheap product. A bottle of The Macallan 1926 60-year-old recently sold for $1,512,000 in auction, marking the largest single sale ever for a bottle. Over the past 50 years, single malts have become increasingly popular. Scottish single malt exports grew by 14.2% in 2017 to reach nearly $1.5 billion. Glenfiddich distillery in Scotland is the world's largest exporter of single malt. Started in Dufftown in 1886, it ships 1.2 million 9-liter cases each year. Making single malt is a difficult and lengthy process. Barley is ground down and added to spring water. Heated to 64°C, it turns to sugar, dissolving into a fine sweet, tangy liquid called wort. The wort is drained, cooled, and passed into wash-backs. This is heated and condensed in copper wash stills for its first distillation, and a second time in spirit stills. This spirit trickles into the spirit safe, ready for maturation, and then is batched in casks with spring water. Casks spend years in the warehouse, maturing into a single malt. An aged 30-year maturation can have 30% to 40% of the alcohol evaporated in the barrel, or over 1% each year of the whisky’s life. This is because of "Angel's Share" — the natural evaporation of the liquid into the atmosphere over time. So older whiskies are expensive not because they’re old, but because they are rare. Fashion, and the collector's market, also have something to do with the rise in popularity. Christie's Director of Wine Tim Tiptree oversaw the sale in 2018 of The Macallan 1926 60-Year-Old, which sold for $1,512,000 to a private buyer. According to Tim, the collector's market will continue to grow. India, China, and Japan, are now main players in the single malt market. Particularly successful is the Yamazaki distillery in Osaka prefecture. Rare whiskies from their collection of single malts now sell for thousands of dollars. We tried a 12 year-old single malt worth $36, and the 50 year-old bottle worth $30,000.
