"Mama" is Thailand's favourite brand of instant noodles, and we love it so much we use it in all sorts of recipes. In this video I show you how to elevate the humble pack of instant noodles into something more sophisticated, and definitely healthier and yummier than just boiling it in hot water! These Mama noodles have a very unique texture and flavour which work well in so many applications including a noodle salad, which if you haven't tried it, make sure you check out the recipe linked below! You can change up the vegetables, but I highly recommend keeping the cabbage and the tomatoes. I'm not adding any meat to this but you certainly can. The eggs, however, are so important! The flavour of the eggs once they've been browned in the wok is so much of what makes this dish so yummy. Learn how to make Pad Thai Noodles which is a popular dish in the Thai cuisine. Pad Thai or Phat Thai is a stir-fried rice noodle dish commonly served as a street food and at casual local eateries in Thailand. It is made with soaked dried rice noodles which are stir fried with eggs and tofu and flavoured with a number of sauces. But, chef Ruchi Bharani has added a vegetarian Indian twist to this Thai recipe. Check it out. Ingredients: 1 1/2 cup boiled flat rice noodles 1 red chilli, sliced 1 stock of lemon grass, sliced 1 tbsp ginger garlic paste 2 spring onions, chopped 1 tbsp oil 1/2 cup bean sprouts salt to taste 1 1/2 tbsp red chilli sauce 1 tbsp soya sauce 1 1/2 tbsp brown sugar 3 tbsp roasted peanuts, half crushed Lemon juice to taste 1/2 green capsicum, cut lengthwise 1/2 red capsicum, cut lengthwise 1 tbsp tamarind paste Method: - Soak the rice flat noodles / pad Thai noodles in water for about 10 minutes and then drain out all water before using the noodles. - Heat oil in a wok. - Add the ginger garlic paste, lemon grass pieces, green capsicum, red capsicum, bean sprouts and sliced birds eye chilli and saute the ingredients. - Add the red chilli sauce, soy sauce, tamarind paste and brown sugar and mix everything well. - Once the sugar melts, add the noodles, some spring onions and the leaves, salt to taste, lime juice and the coarsely ground peanuts and give it a last mix. - The noodles are ready to plate. Garnish with few spring onion leaves and coarsely ground peanuts. - The delicious Pad Thai Noodles are ready to be served. This is not Pad Thai. is Laotian stir fried noodles. ..I love Lao's foods and I think Lao and Thai is almost the same..why not??... I'm Thai/Esaan..LOL!!! 8 oz dried rice noodle sticks ( soak in hot water for 30 mins, drained) 2 eggs (beaten) 1 garlic clove or shallot (minced) 2 mid size tomatoes sliced thin ( optional) SAUCE 1 Tbsp oyster sauce 1 Tbsp soy sauce or seasoning sauce 2 tsp rice vinegar 3 Tbsp sugar 1-2 Tbsp fish sauce 1 -2 Tbsp dark soy sauce( for color) TOP with 1/2 cup beansprouts 1 green onion ( chopped) Note: 1.You may add in slice thinly beef , chicken, pork or shrimp if you desire. 2:Do not set heat too high when you stir frying rice noodles. it'll make your noodle stick together. 3; When all is done, leave to set cool..so the noodle can be seperated..Top with beansprouts and green onion. garnish with celentro and .Enjoy..Yeeee haaa!! Cook noodles in boiling salted water according to packet instructions. Drain and rinse under cold water. Toss with a little vegetable oil. Set aside until ready to use. 2. Heat oil in a large wok over medium high heat. 3. Add chicken and toss over high heat until golden. Add garlic and ginger and fry for 30 seconds. 4. Add the vegetables and stir-fry for two-three minutes more over medium-high heat, stirring continuously for even cooking. 5. Add sugar, cooked noodles, soy sauce, oyster sauce and stir to combine. 6. Here is what you'll need! THAI-STYLE CHICKEN AND PRAWN FRIED NOODLES (PAD THAI) Serves: 4 INGREDIENTS 3 tablespoons Thai fish sauce 3 tablespoons tamarind paste 3 tablespoons light brown sugar ½ lime, juiced 4 tablespoons vegetable oil 2 eggs, beaten 2 chicken breasts, finely sliced 200 grams raw prawns, shelled and patted dry 2 spring onions, finely sliced 1 chilli, finely sliced 30 grams coriander, finely chopped 2 grams garlic, crushed 600 grams flat rice noodles, cooked 100 grams bean sprouts Handful roasted peanuts, roughly chopped Lime wedges, to serve PREPARATION Combine the tamarind, fish sauce, sugar, and lime juice with 1 tbsp water and set aside. Cook the eggs in 1 tablespoon of oil and set aside. Add 1 tablespoon of oil to the frying pan. Sear the chicken until golden and cooked through. Add the prawns to the pan, and cook for about 2 minutes or until they just turn red. Tip in half of the spring onions, half the coriander, garlic, and chilli. Cook for 1 minute until fragrant, then set aside Heat 2 tablespoon of oil in the wok, then add the noodles and bean sprouts. Stir-fry for 2 minutes until the noodles have separated and everything is heated through. Add the chicken, prawns, and tamarind sauce. Toss with the noodles until well-coated. To serve, scatter over the roasted peanuts, remaining spring onions, coriander leaves, and lime wedges. Grandma's Signature Noodles - Vegan (Pad Mee Sua) | Thai Recipe

Pad mee sua, also known as pad mee tiew, is a very popular noodle dish during the vegan eating festival in Thailand. My grandmother happens to love making this delicious and simple noodle stir-fry, and it has become her signature dish that I must have every time I come home! They're so satisfying and addictive! She usually puts pork in it, but I've chosen to make it vegetarian and so I'm using pressed marinated tofu which is delicious in this dish. You can absolutely use chicken, shrimp, beef, or no protein at all. In Thailand this dish uses a special type of noodles that we call "mee tiew" or "mee sua", but here I've discovered that you can substitute Chinese wheat, no-egg noodles that are similar in shape/size. Mine says "chow mein" on the package, but I find sometimes other chow mein noodles contain eggs. A note of caution, I've found that some noodles are only good for soup and do not hold up well for stir-frying, so when buying I would make sure the instructions on the back do say it is appropriate for stir-fry. Pad See Ew (ผัดซีอิ๊ว) is one of the tastiest and most popular Thai fried noodles dishes. Get more delicious food at: http://migrationology.com/ Thailand is extremely famous for food, and when it comes to fried noodles, a certain dish by the name of Pad Thai often gets the spotlight. But there are a few more fried noodle dishes to choose from like pad kee mao, and the dish that's being highlighted in this street food video right here: Pad See Ew (ผัดซีอิ๊ว). This noodle dish all begins with rice noodles, not just any rice noodles, but they are called sen yai, or wide rice noodles. These noodles are prepared fresh in sheets and then sliced into centimeter or so wide strips. It takes a super hot fire to make a perfect plate of Pad See Ew (ผัดซีอิ๊ว), the fire has to be flaming to give the noodles the char fiery flavor they need. Once the wok is heated to the desired level of heat and the oil is smoking, pieces of pork (or chicken if you order it) are tossed in and whirled around for a few seconds. The green vegetable kale, known as kana in Thai, is then tossed in with the pork and stir fried for a few seconds. The the rice noodles enter the furnace of a wok, slowly added to the pan while being stirred so the sticky noodles don't clump together. A few more moments of stirring and in goes the seasoning, mostly including light soy sauce, dark soy sauce, oyster sauce, and pepper. Finally for the finishing touch, an egg is cracked right into the middle of the noodles. The noodles are whisked around for a few more seconds until there's a nice smoky char on the contents and then it's scooped onto a plate and ready to be served. Pad See Ew (ผัดซีอิ๊ว) is popularly eaten with a spoonful of chili flakes tossed on top, and a few scoops of chili vinegar. Or you can choose to eat it just plain to enjoy the delicious flavors from the cooking. I've had quite a few plates of this Thai stir fried noodles dish in Thailand, but my favorite version comes from small shophouse style restaurants where the chef uses a high flame and really scorches the noodles and egg to perfection. When you're looking for a tasty single plate Thai street food meal, don't forget about pad see ew (ผัดซีอิ๊ว). here is how i prepare pad-thai with vegetable and meat start on high heat , let your wok get very hot . add 2Tsp sunflower oil 1 egg add a 2 teaspoon of garlic and ginger paste stir gently add finely chopped vegy carrot, zucchini ,leek,and cabbage ground beef (already cooked) any left over meat can be use about 2 Tsp 1teaspoon sugar 1good teaspoon hoisin sauce pinch of salt 1Tsp dark soya sauce 1/2 Tsp fish sauce and 1/2 soya sauce add a handful of rise noodle ( already soaked in warm water for 30min, and drain ) stir the vegy and the noodle together and let it cook a little , and add spring onions and tomato and voila , you can add chopped peanuts or cashew nuts . squeeze half of lime and you can eat

Add the sauces and sugar, and fry until the shrimp curl and turn pink, then remove them to a plate. 3: Add the onion, corn, and green beans. Stir fry for one minute, then add a little water. Let it get hot and bubbly, then add the cooked noodles. Turn the heat up to high and fry, stirring and flipping until dry and sticky. 4: Turn off the heat, add the basil and stir it in well. Pad See Ew... literally translates to fried noodles with soy sauce. It is very easy to make and uses very minimal ingredients. Just some noodles, sauce and whatever veggies you have on hand, though we think it's best with gai lan or yu choy. This Pad See Ew recipe features our vegan oyster sauce recipe which gives the noodle stir-fry a much richer flavour than making it with soy sauce alone but we have included a recipe below using just soy sauce which is also simple and tasty. VEGAN OYSTER STYLE SAUCE RECIPE HERE: https://youtu.be/lr-aefEGA3E Try Pad See Ew with this sauce, you won't regret it! Ingredients 200 gr dried rice noodles (soaked and cooked) 3 cups chopped Asian greens (gai lan, yu choy, bok choy or vegetables of your choice) 1 cup tofu, seitan or mock meat of your choice 2 cloves garlic minced 1/3 cup vegan oyster sauce 2 tbsp soy sauce/ tamari (we used 1 tbsp light & 1 tbsp dark to give the sauce more colour, but you can use all regular) 1 tsp sugar Or without the vegan oyster sauce: 2 tbsp light soy sauce 2 tbsp dark soy sauce 1 tsp sugar Crushed roasted peanuts and lime wedges (optional) NOTE: We would recommend an oil like grapeseed, soybean, canola etc. as an all purpose cooking oil, especially when cooking with woks. It is not recommended to cook at high temperatures with coconut oil or extra virgin olive oil. These oils have a very low smoke point. Cook noodles in a pot of boiling water for 1 minute or until al dente (undercooked is better, they will continue to cook in the stirfry). Rinse under cold water and drain and set aside. In a wok or skillet on high heat, add 2 tbsp oil, stems/ any hard veggies such as carrots & minced garlic. Stir fry for 30 seconds and add tofu. Cook for an additional 30 seconds. Add noodles, leafy greens & sauce mixture and mix throughly to combine. Cook for about 1 minute mixing continuously until leaves are wilted. Plate and serve immediately with a topping of peanuts and a wedge of lime. Enjoy! Makes 2 large servings. Dai pai dong (from Cantonese 大 排 檔) is a type of open-air food stall in Hong Kong and Guangzhou. Usually gets very busy at night. And this chow mien is one of those dishes that every body orders every time. In China, we have some standers for a good chow mein. The most important one is your chow mein needs to be dry, no excess oil/water liquid. Watch my video to understand how to reach that stander. I got many requests for my wok! The wok I used in this video is a cast iron wok. I got it from China. I didn't find the same exact one on Amazon, but this one is close and has good reviews. I am pretty sure you can find it. **INGREDIENTS** **FOR STIR FRYING** - 3 cups flat rice noodles - 1/2 cup of Chinese leek[韭菜] - 1/2 cup of Chinese chives[韭黄] - 1/2 cup of carrot - 1/2 cup of bean sprout **FOR THE CHICKEN MARINADE** - 150 grams of chicken breast - 1 tsp of cornstarch - 1 tsp of soy sauce [Pearl River Bridge Natural Brewed Light Soy Sauce: https://amzn.to/2TdlvOB] - 1 tsp of vegetable oil - a pinch of baking soda For the seasoning - 1 tbsp of light soy sauce - 1 tbsp of oyster sauce [Lee Kum Kee Panda Brand oyster sauce: https://amzn.to/2B7KLis] - 2 tsp of dark soy sauce [Pearl River Bridge Superior Dark Soy Sauce: https://amzn.to/2Qbjapr] - salt and pepper as require **HOW TO MAKE CHICKEN CHOW MEIN** - Cut the chicken into bite size. Mix it with 1 tsp of cornstarch, 1 Tsp of soy sauce, 1 Tsp of vegetable oil and a pinch of baking soda. Set it aside for 30 minutes - Prepare your vegetables. I use 1/2 cup of Chinese leek[韭菜], 1/2 cup of Chinese chives[韭黄], 1/2 cup of carrot, 1/2 cup of bean sprout. You can use whatever you like. - Have some rice noodles ready. If your noodle comes in a package and it is dry. You can soak them in water until soft or cook them until half way done. Don’t cook it all the way through. Dry it up. - Make the sauce ahead of the time. 1 tbsp of soy sauce, 2 tsp dark sauce soy, 1 tbsp of oyster sauce. - Start cooking. Heat up the work for about 15 seconds. You can do this with a large salted pan as well. Add about 1.5 tbsp of vegetable oil. Cook the chicken first for 1 or 2 minutes. - Push the chicken to the side so you have room for the vegetables. - Add 1 tbsp of garlic and all the vegetables except the bean sprouts. Cook it for 1 or 2 minutes then add in the bean sprout, mix everything together. Set it aside. - Now we gonna do our noodles. Add about 1 and a half tbsp of vegetable oil. Then add in your noodles. Try to spread it. Toss the wok or keep turning the noodles so it cooks evenly. - 4 minutes later. Add the sauce, mix it quickly until the noodles became brown and shining. We can go ahead and add everything together. Mix them until well combined. - Add some salt and pepper to taste. You are done. That looks so good so tempting. Enjoy your meal! Tom Yum Spaghetti is a flavour bomb! It's one of the most popular Thai pasta dishes in Thailand, and it certainly is my favourite. All the tom yum flavours— lemongrass, lime leaves, chili paste, lime, etc.—go so incredibly well with tomato sauce. If you love a good tomatoey pasta, and you love tom yum, get ready to be completely blown away by how delightful this dish is! This recipe is also quite easy and definitely weeknight friendly. In the video I show you an "efficiency" technique so that once you've got all your ingredients prepped, the cooking will only take you as long as it takes to cook the pasta! We actually have several "Thai fusion" dishes in Thailand that have over time become common. Tom yum spaghetti is certainly one of them, as is "spaghetti pad kee mao" for which I also have a recipe. Phad Thai or Thai Style Fried Noodles is a favorite for visitors to Thailand.. Now you can learn to cook this dish at home using the online videos. In the 2 online videos you will be taught by Chef Chanrat Karatna, nickname Air, and his staff not only how to cook Thai Fried noodles but about the ingredients at his cooking school Air's Thai Culinary Kitchen in Chiang Mai Thailand. Copy the recipe below then watch the cooking Thai style fried noodles video. Thai Style Fried Noodles "Phad Thai" * 100g thin rice noodles * 3 tbsp cooking oil (Soya Bean) * 1 tsp chopped red shallots * 20g pork minced * 1 tbsp dried shrimp, rinsed and dried * 10g firm bean curd, diced * 3 tsp chopped salted Chinese radish * 1 tbsp tamarind water/juice * 50g Chinese chives cut 1 inch strips * 2 tbsp crushed roasted peanuts * 1 tsp roasted chili powder * 1 lime wedge * 2 tbsp sugar * 1 egg * ¼ cup bean sprouts * 1 tbsp Thai fish sauce Soak noodles in water for 5 minutes until soft then drain. Heat oil in a wok over medium heat and stir fry shallot and the roasted chili powder until fragrant and color changes. Add pork, stir until cooked then add bean curd, dried shrimp and salted Chinese radish. Push the mixture to the back side of the wok. Add noodles and toss them well then add the sugar, fish sauce and tamarind mixture, stir well. Break in egg and stir until done. Add Chinese chives and bean sprouts stir 30 seconds add peanuts and serve.
