Making New York Cheesecake: The Secret Revealed!

Chef Anna Olson takes you step by step through her amazing New York cheesecake recipe. This makes a 1 9-inch cheesecake. CRUST INGREDIENTS - 1 cup (225 g) graham cracker crumbs - 2 Tbsp (25 g) sugar - ¼ cup (60 g) unsalted butter, melted, plus extra for greasing the pan CHEESECAKE INGREDIENTS: - 4 pkg 250 gram packages of cream cheese, at room temperature - 1 1/4 cup + 2 Tbsp (275 g) sugar - 3 Tbsp (22 g) cornstarch - 2 tsp (10 ml) vanilla extract - 2 tsp (4 g) finely grated lemon zest - 3 large whole eggs - 1 large egg yolk - 1 ½ cup (375 ml) sour cream (not low-fat), divided - 2 tsp (10 ml) lemon juice CRUST DIRECTIONS: 1. Preheat the oven to 350ºF (176 C). 2. For the crust, stir the graham crumbs, sugar and melted butter until evenly combined and press this into the bottom of an ungreased 9-inch springform pan. 3. Bake this for 10 minutes, then cool. Brush the sides of the pan with a little melted butter. CHEESECAKE RIRECTIONS: 1. For the cheesecake, increase the oven temperature to 400ºF (205 C). 2. Beat the cream cheese until light and fluffy. Add the 1 ¼ cups of sugar a little at a time, and scraping the sides and bottom of the bowl often. 3. Beat in the cornstarch, vanilla and lemon zest. 4. Beat in the eggs one at a time, on a lower speed, and scraping after each addition, then beat in the yolk. 5. Still on low speed, beat in ¾ cup of sour cream. Scrape this over the cooled crust. 6. Bake the cheesecake for 10 minutes at 400ºF (205 C) and then reduce the oven temperature to 225ºF (107 C) and bake for 25 more minutes. Turn off the oven, and leave the cheesecake in for an hour, cracking the oven door after 30 minutes. While the cheesecake is baking, prepare the sour cream layer. 7. Stir the remaining ¾ cup of sour cream with the remaining 2 Tbsp of sugar and the lemon juice. Spread this over the top of the cheesecake as soon as it has come out of the oven. 8. Allow the cheesecake to cool completely to room temperature, then carefully run a spatula around the outside of the cheesecake to loosen it from the pan, then chill the cheesecake for at least 6 hours before slicing and serving. The cheesecake will keep, refrigerated, for up to 4 days. Start to Finish: 5 hours (includes cooling time) Prep Time: 30 minutes Servings: 16 Ingredients: Crust 1 1/2 cups graham cracker crumbs 1/4 cup of sugar 8 tablespoons butter, (1 stick) melted Filling 4 (8 oz) packages of cream cheese, softened 1 1/4 cup sugar 2 teaspoons vanilla 2 tablespoon lemon juice 5 eggs 2 tablespoons of flour Sour Cream Layer 1 pint of sour cream 1/3 cup of sugar 1/2 teaspoon vanilla 1 tablespoon lemon juice Garnish (optional) Fresh sliced strawberries Strawberry sundae syrup Whipped cream -- See my video for how to make home made Whipped Cream Directions: HEAT oven to 325°F. In a bowl mix graham cracker crumbs, sugar and butter, press onto bottom and slightly up the sides of 10-inch spring-form pan. Bake in oven for 10 minutes. While crust is baking, make the filling by beating the cream cheese, sugar, vanilla and lemon with electric mixer until smooth and well blended. Add eggs, 1 at a time, mixing at medium speed after each egg is added until all is blended making sure to scrape down the batter with a spatula. Add flour and mix until smooth. Remove crust from oven, but keep oven on and let the crust cool for 5-10 minutes then pour the filling over crust. Bake for about 50-55 minutes or until cake is cooked but has a slight jiggle in the center. Remove from oven, again keeping oven on and set aside for 5-10 minutes so it cools slightly while you make the sour cream topping. In a small bowl mix the sour cream, sugar, vanilla and lemon. Spoon over the top of the cheesecake and spread evenly. Put cake back in oven and bake for 10 minutes. Remove from oven and loosen cake from rim of pan with knife. Cool before refrigerating. Cover and refrigerate at least 3 hours or over night. Before serving, remove rim from pan and plate and slice cake. Garnish each slice with fresh strawberries and a drizzle of strawberry sundae syrup along with some whipped cream. Cooking Tips: Wrapping foil around the bottom of the pan helps to keep anything from dripping out while baking. It is best to store the cheesecake in the spring-form pan until ready to serve. The pan will protect it from getting bumped in the refrigerator. Slice cake using a hot, wet knife, wiping knife blade clean in between slices. Store leftover cheesecake in the refrigerator. Whipped Cream Cheese can be replaced for half of the recipe. I sometimes like to use 2 whipped and 2 regular 8 oz. packages. Other options for the crust: You can replace the Graham Crackers with Chocolate cookies or vanilla wafer, If making this recipe for Passover you can use crushed macaroons or crushed matzo for the crust in place of the Graham Crackers. Rich, dense, and tangy, it's so good that we developed our own recipe inspired by this decadent treat. Watch the video to see how it's made as well as a handful of helpful tips, then try it for yourself. Classic New York Cheesecake Inspired by The Cheesecake Factory Make sure all ingredients are at room temperature before you begin. Cheesecake tastes best when made at least 1 day ahead. Cheesecake can be frozen for up to 2 weeks if tightly wrapped in plastic wrap. Allow to thaw in the refrigerator overnight before serving. INGREDIENTS For the crust: 1/2 cup almonds, finely ground 1/2 cup vanilla wafers, finely ground 1/2 cup graham crackers, ground 2 tablespoons melted butter For the filling: 24 ounces cream cheese, at room temperature 1 1/3 cups granulated sugar 5 large eggs, at room temperature 16 ounces sour cream, at room temperature 1/4 cup flour 2 teaspoons vanilla extract 2 teaspoons lemon juice For the blueberry compote (optional): 1 cup blueberries 2 tablespoons lemon juice 2 tablespoons granulated sugar 1 teaspoon lemon zest 1/2 tablespoon cornstarch DIRECTIONS Preheat oven to 325°F. Grease a 9-inch springform pan with melted butter or cooking spray. Make the crust: Thoroughly mix together the nuts, graham crackers, vanilla wafers, and melted butter in a medium bowl. Pat mixture into prepared pan, pressing firmly into bottom and about 1 1/2 inches up the sides. Make the filling: Using a stand or hand mixer, beat the cream cheese on low until light and fluffy. Add the sugar a little at a time and beat until creamy. Add 1 egg at a time, beating until smooth after each egg. Add the flour, vanilla, and lemon juice, and mix well. Add the sour cream, and beat well. Firmly tap the bowl against the counter to release bubbles from the filling. Pour the cheesecake filling into the springform pan, shaking the pan to ensure that the filling is evenly distributed. Cook on the oven's middle rack for 1 hour and 30 minutes, or until firm. Turn off the oven's heat, and leave the cheesecake in the oven with its door propped open for 1 hour. Remove cheesecake from oven, and let cool completely on the countertop before transferring to the refrigerator to chill for at least 12 hours. Make the blueberry compote (optional): Combine the blueberries, lemon juice, sugar, and lemon zest in a small saucepan set over medium-high heat. Cook, stirring occasionally, for 5 minutes. Add the cornstarch, and cook until the blueberries have broken down and the sauce has thickened slightly. Serve plain or with whipped cream, fresh fruit, or warm blueberry compote. The mixture here is like a sweetened quiche filling, which is slightly denser and less fluffy than the classic British cheesecake. But because it has no biscuit base, the result is less sweet and heavy. Butter, for greasing 550g cream cheese, at room temperature 160g caster sugar 3 eggs, lightly beaten 2 tbsp plain flour Finely grated zest of 1 lemon 200g raspberries 1. Preheat the oven to 180°C/Gas 4. Butter a 23cm springform cake tin. 2. Beat together the cream cheese and sugar. Add the beaten eggs bit by bit until combined. Add the flour and lemon zest, then fold through the raspberries. 3. Spoon the mixture into the prepared cake tin, tapping it against the work surface to remove any bubbles and help the raspberries rise up from the bottom. Bake in the preheated oven for 35 minutes until set on the edges but wobbling slightly in the middle. 4. Once cooled, remove from the tin, running a knife around the edges to loosen if necessary, and serve. I'm Sonia and today we'll be making a traditional American dessert: the New York cheesecake. Let's see what ingredients we'll be using: • 9 oz (250 g) of graham crackers or digestive biscuits- • 7 oz (200 ml) of sour cream • 1 tbsp of powdered sugar • 1 tsp of vanilla extract • 10 and a half tbsp (150 g) of butter- • 2 tbsp of cane sugar- • 7 tbsp (100 ml) of heavy cream- • 21 oz (600 g) of cream cheese- • 2 tbsp (20 g) of cornstarch • The juice from half a lemon • 3 eggs- • Half a cup (100 g) of sugar- Let's look at how we'll make our cheesecake. We'll begin by making the base of the cheesecake. Crush the graham crackers together with the cane sugar in a food processor. Put the mix into a bowl and add the melted butter. Mix together until you get a dense mixture. I've buttered a 10 inch (24-26 cm) springform pan. Place a piece of parchment paper cut to the same diameter into the bottom of the pan. Now, with the graham cracker mix, cover the bottom and sides of the pan. Here's the crust. Place it in the refrigerator to set for an hour, or in the freezer for 30 minutes. In this bowl, I'm preparing the custard mix that we'll pour into the crust. I've mixed together the cream cheese, the cornstarch, the eggs, the heavy cream and the sugar. After adding two pinches of salt and the lemon juice to the custard, we're ready to pour it into the crust. When you've done that, you're ready to bake the cake at 350°F (180°C) for 30 minutes. Then lower the temperature to 320°F (160°C) and continue to bake for another 30 minutes. In this bowl I've added the sour cream, the powdered sugar and the vanilla extract. Now form a layer on the top of the cake and put the cake back in the oven for another 5 minutes at 360°F (180°-190°C) and then place the cake on a rack to cool. Transfer to a small bowl. Melt the butter and cool before pouring into the biscuit crumbs and mix until well combined. Pour the crumbs into a lined cake tin and use the back of a spoon to compact down. Place the cake tin into the fridge to set. Whip the cream until soft peaks form by hand or with a hand mixer. Set to the side. In a medium sized bowl add the room temperature cream cheese and icing sugar. Beat together with a whisk until smooth and lump free. Zest and juice the lemon and place into the bowl with the cream cheese. Mix to combine. Dissolve the powdered gelatine in the boiling water and add to the mixing bowl, stirring to combine. Add the cream to the cream cheese mixture and fold together until well combined. Pour the cheesecake filling on top of the cheesecake base and smooth. Place into the fridge for a few hours to set. Blend the can of berries and strain through a sieve into a medium sized bowl. Dissolve the gelatine in the boiling water and pour into the berries. Mix until combined. Pour the berry mixture on top of the cheesecake and place into the fridge to set for at least 4 hours or overnight. Serve topped with berries and fresh whipped cream. This classic cheesecake is one of the best desserts ever, rich and decadent. Hardly can anyone stop to one slice. To print the recipe check the full recipe on my blog: http://www.homecookingadventure.com/recipes/classic-cheesecake Ingredients Makes about 10-12 servings Crust 9 oz (250 g) digestive biscuits or graham crackers 6 tbsp (80 g) unsalted butter, melted Cream Cheese Filling 2 pounds ( 1kg) cream cheese, room temperature 1 cup (240g) sour cream 1 cup (200g) sugar 1 tsp (5g) vanilla 5 eggs, room temperature 1 tbsp (8g) cornstarch pinch of salt lemon zest from 1 lemon 1. Prepare the crust. Preheat oven to 350 F (180C). Crush the biscuits/crackers using a food processor until crumbs form.Pour the melted butter over the crumbs. Process until evenly moistened. Press the crumbs mixture with the back of the spoon into the bottom of a 10-inch (26 cm) springform pan (with a removable base). Bake for 13-15 minutes. Set aside to cool completely. 2. Reduce oven temperature to 300F (150C). 3. Prepare the cream cheese filling. In a large bowl mix the cream cheese until smooth. Add sugar, cornstarch and salt and mix until combined. 4. Add eggs one at a time until each egg is incorporated. Add vanilla extract, lemon zest and sour cream. Mix until well combined. Try to not overmix the batter to incorporate as little air as possible. 5. Pour the cream cheese mixture over the prepared crust. 6. Bake for 45-55 minutes. Turn off the heat and leave it another hour in the oven. 7. Remove and run a sharp knife around the inside edge of the pan. Let it cool completely at room temperature. Cover and refrigerate overnight. 8. Decorate with your favorite fruits and dust with powdered sugar if desired before serving. Preheat oven to 320F (160C). 2. In a food processor, process biscuits until crumbs are formed. Add melted butter and process again until combined. press into bottom of 9-inch (23 cm) springform pan. Bake for 10 minutes. Let cool while making the filling. 3. Filling: chop the chocolate and place in a heat proof bowl. set over pot with simmering water and melt completely (you can do this step in the microwave: 20 seconds pulses until melted). Set aside. 4. In a large bowl beat cream cheese, sugar, salt and vanilla extract, beat until smooth. And sour cream and beat again until smooth. Add cocoa powder and beat again, scrape the sides of the bowl if needed. 5. Add the eggs, one at the time, beating to combine after each one. add the melted chocolate, mix until combined and smooth. 6. Wrap the bottom of the pan with aluminum foil. Pour the filling over the crust. place in a roasting pan. Place roasting pan in oven. Pour in boiling water to come halfway up side of springform pan 7. Bake for 55-60 minutes, or until center is almost set. Turn off the oven, slightly open the oven door, and allow the cake to cool in the oven for 1 hour. Remove from oven, run a thin knife around the edge of the pan, let cool to room temperature and refrigerate overnight. 8. For the ganache: chop the chocolate, place in a large bowl. In a saucepan bring the heavy cream to a simmer. Pour over the chocolate. Let sit for 1-2 minutes. Stir until smooth. Let cool slightly. 9. Pour over the cheesecake, let set and serve. Water bath for Cheesecake. This is the best way to keep your cheesecake from cracking during baking. Hey Foodies, I have a great recipe for my version of New York style cheesecake, but it can be frustrating finding deep cracks in your just baked, beautiful cheesecake. So, how do you prevent those? It's simple, just use a water bath. Water baths infuse moisture into the oven and can also provide even and gentle heating. Now larger cheesecakes like Classic New York Style Cheesecakes tend to bake more unevenly so they are more prone to cracking. You'll want to place your spring form pan, the best kind of for baking cheesecake directly into a water bath. Now first you'll want to wrap that pan in foil. Now that's going to make it water tight. Then set it in a large roasting pan filled with just enough water to last the entire baking process. If you have too much water, you could risk it overflowing onto your cake. Now smaller cheesecakes, like those made in individual ramekins, tend to cook more evenly so you can use an indirect water bath. Just use a 9" x 13" baker filled half way with water on the bottom rack of your oven, then place you ramekins on a higher rack toward the middle and bake as directed. With both large and small cheesecakes try to fight the urge to stick a knife or toothpick into the center to test for doneness. That's just another reason that you'll cause cracks. The middle of the cheesecake should jiggle just a little when you take it out of the oven and as it rests it will continue to cook and then eventually firm up nicely. Place in the fridge for at least 3 hours before serving Eat within 3 days and store covered in the fridge ▼▼TIPS▼▼ Use fresh unwaxed lemons to zest (only get the yellow part not the white - the yellow has the citrus flavour, the white is bitter). I zest using a microplane and it's really effective and super inexpensive to purchase. Use a good quality lemon extract (not flavour as they taste artificial) Use full fat cream cheese or mascarpone. Make sure the cream cheese is completely smooth before adding any other ingredients or you will get a lumpy cheesecake. Tap the cheesecake on the counter a few times before baking to remove large air pockets I used ginger nut biscuits and oat biscuits for the base - use a food processor to get tiny crumbs for the base (alt place the biscuits in a zip lock bag and bash with a rolling pin) Double line the tin so you don't get brown edges. I used a wilton baking trip around the tin so that the edges cook slower allowing for even baking - optional. HEALTHIER RASPBERRY CHEESECAKE Serves 6-8 INGREDIENTS 10 graham crackers 3 tablespoons milk 16 ounces reduced-fat cream cheese, room temperature ⅓ cup honey 2 cups greek yogurt 2 eggs 1 tablespoon vanilla extract 2 tablespoons cornstarch 3 cups raspberries PREPARATION Preheat oven to 350°F/180°C. Place graham crackers in a plastic bag and crush with a rolling pin until fine. In a medium bowl, mix the cracker crumbs with the milk, stirring until the milk has incorporated completely into the crackers with the texture of slightly wet sand. Pour the cracker mixture into a 9-inch springform pan. Press down the crust evenly using the back of a flat measuring cup or spoon. Bake for 15 minutes, then cool. Reduce the heat to 300°F/150°C. In a large bowl, whisk the cream cheese until there are no lumps. Add the honey, greek yogurt, eggs, vanilla, and cornstarch, mixing until smooth. Pour the cheesecake batter into the graham cracker crust. Spread evenly. Bake for about 1 hour, then cool for about 30 minutes. Top with fresh raspberries in a ring pattern on the top of the cheesecake. Chill until the cheesecake has set, 2-4 hours. Unmold, slice, then serve!
